  • 2.0 out of 5 stars from Sergio -- Very basic Mexican/Central American recipes to say the least : I was thrown off by the description "vegan mexican recipes" when there's a lot of foods in this book that come from Central America. Give flowers when they are due! :) .... especially when mexicans track record of how they treat Central Americans is really rotten. If you come from a latin backround the recipes are extremely basic to say the least. The pictures are beautiful but I was expecting a little bit more in food options. A lot of the foods felt repeated rice and beans, potatoes and rice, cactus and rice, beans and potatoes and cactus and egg.. you get the idea.   • 5.0 out of 5 stars from Ashley -- Amazing : This is easily my favorite cookbook of the year. Perhaps ever! These recipes look amazing! I literally want to cook everything, EVERYTHING!! Seriously everything in this book looks delicious. And I love that the recipes are so accessible. I haven’t come across any ingredients that would be difficult to find.   • 5.0 out of 5 stars from Tracy - Olympia -- Great Pictures and Great Tasting Food : Of course I had to pick one of the most involved recipes in the book "Tortas de Tofu". I had to cook the pinto beans "Frijoles de la Olla"; then I used some of the beans to make refried beans "Frijoles Fritos"; then I had to make the chipotle barbecue sauce. All this in addition to making the fried tofu for the sandwich. Let me tell you, I was lucky enough to find the coconut manna (coconut butter) at a local grocery story and this made a big difference in the refried beans. I've never had refried beans this good. We will be making the refried beans and chipotle barbecue sauce for other uses. Oh, and the sandwich was fantastic. Will be making again in a couple of days since I have everything prepared and we really enjoyed it. Next up - Adobo Mushroom Tacos. ( Reviewed in the United States on October 24, 2021 )
  • 5.0 out of 5 stars from Caitlyn -- I made two recipes , turned out great : So my pics aren’t as great looking as in the cookbook, but it taste yummy . When I first got the book, I was super excited . The pics look great , you can feel the connection that Edgar has with each recipe he has created , and overall it’s just a beautiful book. The first recipe is Pozole Rojo, so that is what I decided to create . It also suggests making the corn tortillas so I did that too. I’ve never made these before in my life, but the recipe is easy to follow and easy to make . You don’t need fancy tools, he even suggests alternatives ( no tortilla press ? Use two hard cover books, which I did ) the pozole was yummy and the corn tortillas turned out great too, even though I think I need a bit more practice . I added more garlic than he called for ( but who doesn’t do this with everything ?) and I had to use low sodium products because my partner has bp issues , but even with less salt , it tasted delicious. The mushrooms have such a meaty texture and absorb so much flavor you don’t even think about it being vegan. I can’t wait to make another recipe from this book, maybe tomorrow !   • 3.0 out of 5 stars from Lexi -- Not what I expected : I bought this book expecting to dive into a bunch of authentic moles, stews, and other recipes I've never heard of, but was disappointed to only find mostly "basic" vegan recipes. Was also disappointed to find ingredients like maple syrup, mustard, and almond butter and excerpts like "my friend's mom says it tastes authentic" (doesn't lend much confidence to the author's credibility on the subject). Edgar shares recipes from his life that are adapted oh-so-carefully to be plant-based. But if no one told you it was vegan, you wouldn't even think twice! It was hard for me to be vegan around my guatemalan family. While I was eating plain vegan food my family got to enjoy tacos, enchiladas ext. Sometimes in Australia, Mexican ingredients can be hard to come across, but I found I have been able to locate everything (some of the dried chillies required an online order).
